In a summer camp full of exercise and activities, it’s important that kids have nutritious meals filled with vitamins, cereals, protein and veggies. Thinking about healthy food doesn't always mean complicated, boring and tasteless, it can be delicious and even easier to make. Here are some dishes that you can easily make for the kids to have a tasty and nourishing lunch at summer camp.

Salads.

When we think of salads we automatically think of bland lettuce, but salads can be really appetizing and don't only have to contain greens. Quinoa salads are a great option, as you can use it as a base (that way you algo get some carbohydrates for the energy) and mix it with veggies like tomato, cucumber, bell pepper, corn, olives and many others. Add a dressing and some seeds to top it up.

Another great idea for salads is adding pasta, that way it has more texture and it doesn't become too leafy. And if you really want to make it tasty and healthier, add some hard boiled eggs, hearts of palm and artichokes.

Sandwiches.

There are so many variables for a good sandwich, and it’s really hard to mess it up. The key is the bread; a good ciabatta will make a great sandwich, and you can fill it out with some cold meats, like salami, pastrami, turkey, roast beef or ham; add a mixture of cheeses, gouda and cheddar make an excellent pair; and finally, fill it with some veggies like lettuce, tomato, pickled gherkins and onion.

A sandwich station can also be a great option. On a table, lay out all the ingredients, and everyone can add what they like to their bread. That makes it so much easier for everyone to only put what they want and create their perfect sandwich.

Wraps.

Quite similar to a sandwich but special in its own way, a wrap is a great alternative, especially for eating on the go and without getting too messy. Wraps can mix many different flavors and have a balanced mix of ingredients, so don’t be scared of getting creative with your cooking.

A great wrap recipe is the Fried Chicken Wrap. In two wraps you spread some burger sauce, add lettuce, fried onions, pickled gherkins and tomato. Finally, slice up a fried chicken breast, put it in, top it with some cheese and wrap it up. This goes great with some crisps on the side.

Falafel .

Falafels are a great dish, and they’re also vegetarian, but that doesn’t mean they’re not filled with protein. In a pita bread, add some coleslaw, cucumber and tomato salad, you can also mix this salad with a little bit of olive oil, garlic, lemon, and spices. Fill it up with some falafel, olives, onion and finally, add tahini and hummus. Some french fries will do great on the side.

Barbecue.

A barbecue never fails to please everyone. It's simple and easy, yet delicious and fulfilling. Turn the heat up and get some corn on the cob, courgettes, onions, broccoli, bell peppers and whatever other vegetables you can think of cooking. And for the good part, roast some big sausages to make hot dogs and some patties for the burgers. Heat some buns and don’t forget to set a table with tomato, lettuce, cheese, ketchup, mustard and mayo; that way, everyone can assemble their own tasty barbecue meal.

And for dessert? .

Nobody has finished eating without a sweet bite at the end. Ice pops and ice cream are always a great and easy dessert, but if you want to do something a bit more elaborate, why not try a cookie casserole? In a pan, add a thick layer of chocolate chip cookie dough and then add a top layer of mini marshmallows. Bake it until it’s soft, add a scoop of vanilla ice cream, or whichever one you prefer, and voila! You’ve got yourself a mouthwatering dessert.

Bon Appetit!
